Soft Courgette & Cheese Fritters

INGREDIENTS
- 1 small courgette, grated & squeezed dry
- 3 tbsp grated cheese
- 1 egg
- 3 tbsp flour
HOW TO COOK
- 1Mix the courgette, cheese, egg and flour into a thick batter.
- 2Heat a little oil in a non-stick pan on medium-low.
- 3Cook small spoonfuls 2 min each side until golden and set.
- 4Drain, cool and serve in baby-fist-sized strips.
