Sweet Potato Purée

INGREDIENTS
- 1 medium sweet potato, peeled & cubed
- Water or unsalted stock
HOW TO COOK
- 1Steam the sweet potato cubes for 12–15 min until very soft.
- 2Blend with a splash of the cooking water until silky.
- 3Cool to lukewarm and check the temperature before serving.
- 4Freeze extras in an ice-cube tray for quick meals.
TIP
Swap for butternut squash or carrot using the same method.
