Silky Steamed Egg with Fish

  • 80ml unsalted stock or water
  • 1 tbsp finely flaked cooked fish
  • A few peas or chopped soft veg
  1. 1Whisk the egg with the stock and strain for a smooth custard.
  2. 2Stir in the flaked fish and soft veg in a heatproof bowl.
  3. 3Steam on low 10–12 min until just set and silky.
  4. 4Cool to warm; serve with soft rice.
