Purple Sweet Potato Egg Tarts

  • Purple sweet potato
  • 2 egg yolks
  • Milk or formula
  • 1 tbsp cake flour
  1. 1Steam and mash the purple sweet potato until smooth.
  2. 2Mix the mash with cake flour and knead into a dough.
  3. 3Whisk the egg yolks with milk for the custard filling.
  4. 4Shape the purple dough into small tart cases.
  5. 5Fill with the custard and steam or bake until set.
