Purple Sweet Potato & Egg Pudding

  • Purple sweet potato
  • Chinese yam
  • 1 egg
  • Milk or formula
  1. 1Steam and mash the purple sweet potato, pressing through a sieve until smooth.
  2. 2Steam and mash the Chinese yam separately until smooth.
  3. 3Whisk the egg with milk and strain.
  4. 4Layer the purple potato, yam and egg mixture in a cup.
  5. 5Steam until set into a soft pudding.

Strain the egg mixture for an extra-silky custard.
