Prawn, Mushroom & Tofu Soup

  • Prawns
  • Tofu
  • Mixed mushrooms
  • Carrot
  • 1 egg
  1. 1Cut tofu into small cubes; dice the mushrooms and carrot.
  2. 2Scramble the egg, then set aside.
  3. 3Sauté the mushrooms, carrot and tofu.
  4. 4Add prawns and cook until pink.
  5. 5Add water for a light soup and simmer.
  6. 6Stir the egg back in and combine.

A quick one-pan soup with soft, gummable pieces.
