Pork & Shrimp Balls in Tomato Broth

  • Meatballs: 800g pork mince, 500g raw shrimp minced, ½ cup chopped spring onion, 1 tsp minced garlic, ½ tsp minced ginger, 1 egg, 1 tbsp soy sauce, 2 tbsp oyster sauce
  • Broth: 4 medium tomatoes (skin removed), 2 cloves garlic minced, water or chicken stock, salt to taste
  1. 1Mix all the meatball ingredients together and roll into small balls.
  2. 2Simmer the tomatoes and garlic in water or stock until the tomatoes break down.
  3. 3Drop in the meatballs and cook through.
  4. 4Cool slightly and serve with the broth, chopping meatballs small for little eaters.

Freezes well — make a big batch of meatballs ahead and freeze extras.
