Hidden-Veg Tomato Pasta

INGREDIENTS
- Small pasta shapes (e.g. macaroni)
- 1 carrot + ½ courgette, grated
- 1 tin chopped tomatoes (no salt)
- 1 tsp olive oil
- Grated cheese to finish
HOW TO COOK
- 1Soften the grated veg in the oil for 5 min.
- 2Add the tomatoes and simmer 12 min until thick.
- 3Blend smooth if you like, then toss with cooked pasta.
- 4Stir in cheese and cool to warm before serving.
