Hidden-Veg Tomato Pasta

  • Small pasta shapes (e.g. macaroni)
  • 1 carrot + ½ courgette, grated
  • 1 tin chopped tomatoes (no salt)
  • 1 tsp olive oil
  • Grated cheese to finish
  1. 1Soften the grated veg in the oil for 5 min.
  2. 2Add the tomatoes and simmer 12 min until thick.
  3. 3Blend smooth if you like, then toss with cooked pasta.
  4. 4Stir in cheese and cool to warm before serving.
