Red Lentil & Veg Mash

Soft mash with lumps · 25 min · 3 portions

  • 3 tbsp red lentils, rinsed
  • 1 small carrot, diced
  • ¼ onion, finely chopped
  • 1 tsp olive oil
  • 200ml unsalted stock or water
  1. 1Soften the onion and carrot in the oil for 3–4 min.
  2. 2Add the lentils and stock, then simmer 18–20 min until very soft.
  3. 3Mash to a soft, lumpy texture (or blend for younger babies).
  4. 4Cool to warm before serving.

Iron from lentils absorbs better served with veg like this.
