Grandma's Scallop & Chickpea Congee

  • Rice
  • Dried scallop
  • Chickpeas
  • Carrot
  • Potato
  1. 1Grate the carrot finely so it softens fully.
  2. 2Add rice, carrot, diced potato, chickpeas and rehydrated dried scallop to a pot.
  3. 3Pour in water and cook low and slow into a soft congee.
  4. 4Stir well and mash any larger pieces before serving.

Dried scallop adds gentle natural umami so no salt is needed.
