INGREDIENTS
- Rice
- Dried scallop
- Chickpeas
- Carrot
- Potato
HOW TO COOK
- 1Grate the carrot finely so it softens fully.
- 2Add rice, carrot, diced potato, chickpeas and rehydrated dried scallop to a pot.
- 3Pour in water and cook low and slow into a soft congee.
- 4Stir well and mash any larger pieces before serving.
TIP
Dried scallop adds gentle natural umami so no salt is needed.
