Fish Jeon (Korean Pan-Fried Fish)

  • Cod or pollock fillets
  • Plain flour
  • 1 egg, beaten
  • Pinch of salt
  • Dipping sauce: 1 tbsp soy sauce, 1 tbsp water, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, 1 tsp sesame seeds
  1. 1Cut the fish into bite-sized pieces and season lightly with salt.
  2. 2Dust each piece in flour, then dip in the beaten egg.
  3. 3Pan-fry in a little oil until golden on both sides and cooked through.
  4. 4Mix the dipping sauce ingredients and serve alongside, checking the fish carefully for bones.
