Mini Salmon Fish Cakes

  • 1 cooked salmon fillet, flaked
  • 1 small potato, boiled & mashed
  • 2 tbsp sweetcorn or peas
  • 1 tbsp flour for shaping
  1. 1Mix the salmon, mash and veg; check for bones.
  2. 2Shape into small patties and dust lightly with flour.
  3. 3Pan-fry in a little oil 2–3 min each side until golden.
  4. 4Cool and cut into strips.
