Eat Up Beef Bolognese

Soft mince sauce (blend for 8–10m) · 30 min · 4–6 portions

  • 2 stalks celery, diced
  • 1 medium carrot, diced
  • 1 medium onion, diced
  • ¼ cup dried red lentils, pre-soaked in boiling water 30 min
  • 250g beef (or any) mince
  • 250g canned whole tomatoes or tomato purée
  1. 1Sauté the celery, carrot and onion over medium heat until soft (~5 min).
  2. 2Add the mince, breaking it up, and fry until thoroughly cooked (~10 min).
  3. 3Stir in the canned tomatoes and soaked red lentils until well combined; bring to a boil, then simmer 10 min.
  4. 4Cool, then freeze in portion cubes.

Red lentils add a quiet boost of protein, iron and fibre. 8–10m: blend to a purée. Steam 60ml cubes 15–20 min to reheat.
