Creamy Pumpkin Baby Noodles

  • Baby noodles (somen)
  • Carrot
  • Broccoli
  1. 1Steam and mash the pumpkin until smooth and creamy.
  2. 2Break the baby noodles into short lengths.
  3. 3Simmer the noodles with finely chopped carrot until soft.
  4. 4Stir the pumpkin mash through the noodles until creamy.
  5. 5Add chopped broccoli and cook briefly to finish.

The pumpkin makes a naturally creamy sauce, no dairy needed.
