Claypot Chicken & Mushroom Rice

  • 600g chicken thigh, cut into pieces
  • 5 dried shiitake mushrooms, rehydrated and sliced
  • 1 Chinese sausage, sliced (optional)
  • 2 tbsp ginger, minced
  • 3.5 tbsp oyster sauce
  • 2 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 2 tsp sesame oil
  • 2 cups rice, rinsed
  • 2 cups boiling water
  1. 1Marinate the chicken and mushroom in the sauces for 30–45 minutes.
  2. 2Lightly stir-fry the rinsed rice in a hot pan, then pour in the boiling water.
  3. 3Once boiling, arrange the chicken, mushroom and sausage on top and cover.
  4. 4Cook on low-medium for 15–20 minutes until the rice is done and a crust forms at the bottom.

Leave out the Chinese sausage for baby's portion — it's a processed, salty ingredient best kept for the adults.
