Mild Chicken & Coconut Curry

INGREDIENTS
- 1 chicken breast, diced small
- ½ onion + 1 carrot, finely chopped
- ½ tsp mild curry powder
- 150ml coconut milk
- Cooked rice to serve
HOW TO COOK
- 1Soften the onion and carrot, then stir in the curry powder.
- 2Add the chicken and brown for 3–4 min.
- 3Pour in the coconut milk and simmer 12–15 min until tender.
- 4Chop any large pieces small and serve over soft rice.
TIP
Keep it salt-free; let adults season their own bowls.
