Cheesecake-Stuffed Christmas Cookies

INGREDIENTS
- 200g unsalted butter
- 2¼ cups plain flour
- 1 tsp baking soda
- ½ tsp salt
- 1.5 cups brown sugar
- 2 tsp vanilla extract
- 2 eggs
- 1.5 cups chopped white chocolate
- Filling: 250g cream cheese, ½ cup sugar
HOW TO COOK
- 1Freeze the cream cheese and sugar filling for at least 4 hours until firm.
- 2Mix the butter, sugar, vanilla and eggs, then fold in the flour, baking soda, salt and white chocolate.
- 3Wrap a small disc of dough around a piece of the frozen filling and roll into a ball.
- 4Bake at 180°C for 15 minutes until just golden; chill the dough overnight for the best texture.
