Cheesecake-Stuffed Christmas Cookies

  • 200g unsalted butter
  • 2¼ cups plain flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1.5 cups brown sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1.5 cups chopped white chocolate
  • Filling: 250g cream cheese, ½ cup sugar
  1. 1Freeze the cream cheese and sugar filling for at least 4 hours until firm.
  2. 2Mix the butter, sugar, vanilla and eggs, then fold in the flour, baking soda, salt and white chocolate.
  3. 3Wrap a small disc of dough around a piece of the frozen filling and roll into a ball.
  4. 4Bake at 180°C for 15 minutes until just golden; chill the dough overnight for the best texture.
