Cantonese Steamed Fish

  • A white fish fillet (e.g. snapper, grouper or cod)
  • Ginger, julienned
  • Spring onion, julienned
  • 2 tbsp oil, heated
  • Sauce: 2 tbsp soy sauce, 1 tbsp water, ½ tsp sugar, drizzle of sesame oil, dash of white pepper
  1. 1Place the fish in a steamer over boiling water and steam for 7–8 minutes.
  2. 2Drain off the liquid that collects, then top with the julienned ginger and spring onion.
  3. 3Pour the hot oil over the fish to lightly cook the aromatics.
  4. 4Pour over the sauce, flake the fish carefully checking for bones, and serve.
