Broccoli & Egg Yolk Flowers

INGREDIENTS
- Broccoli
- 1 tbsp cake flour
- 1 egg yolk
HOW TO COOK
- 1Steam and blend the broccoli into a smooth purée.
- 2Mix the purée with cake flour into a pipeable green batter.
- 3Whisk the egg yolk separately.
- 4Pipe broccoli batter into flower-petal shapes in the pan, then add egg-yolk centres.
- 5Cook gently until set.
TIP
Pipe the petals first, then add a yolk centre for the flower look.
