Broccoli & Egg Yolk Flowers

  • Broccoli
  • 1 tbsp cake flour
  • 1 egg yolk
  1. 1Steam and blend the broccoli into a smooth purée.
  2. 2Mix the purée with cake flour into a pipeable green batter.
  3. 3Whisk the egg yolk separately.
  4. 4Pipe broccoli batter into flower-petal shapes in the pan, then add egg-yolk centres.
  5. 5Cook gently until set.

Pipe the petals first, then add a yolk centre for the flower look.
