Baby Banana Cakes

  • Banana
  • Cake flour
  • 1 egg
  • A little cocoa (optional, for colour)
  1. 1Blend banana and egg into a smooth batter.
  2. 2Stir in cake flour; fold cocoa into one half for two colours.
  3. 3Spoon the mixtures into a piping bag.
  4. 4Pipe into a greased shaped silicone mould.
  5. 5Steam until set, then cool and turn out.

High in fibre and iron; no sugar, no yeast and ready in under 30 minutes.
